A love letter to Chablis…

Dear Chablis,

A friend rolled his eyes when I recently suggested you were one of my favorite French white wines. I get it. You haven’t always had the best reputation. California really screwed you using “Chablis” on its jug wine labels in the 1980s. But to me, you are perfect.

I love that you are rarely oaked. Jancis Robinson has called you one of the purest expressions of Chardonnay, and I couldn’t agree more. I love that your grapes grow in this gorgeous soil-full of old seashells- that gives you this oceany, flinty, delicious flavor. I love that your wine region is so far north in Burgundy that it’s cold, so you end up with more acidity than other Chardonnays, and can age really well.

I love how sometimes you can be steely and lean, a great pick for someone who typically drinks more Sauvignon Blanc, but wants to venture into Chardonnay. I love that you keep it simple. Just 100% pure Chardonnay grapes, no bull shit.

I love you Chablis.

Ps-This Romain Collet 2019 Chablis imported by APS Wine and Spirits is really good. No oak, great fruit. Lots of acidity and oyster shell goodness.
