Wild Rosé
Wow, this Champagne is wild!
I should’ve expected it: Rosé Sauvage means Wild Rose in French.
But, I still wasn’t prepared for how unique this Piper-Heidsieck Champagne is.
In the glass, it’s a brilliant deep pink, almost the color of its label. That’s because there’s red wine in here. Piper Heidsieck Rosé Sauvage is made with 50% Pinot Noir (35% grapes and 15% wine), 25% Chardonnay grapes, and 25% Pinot Meunier grapes. It has gorgeous bubbles and a clean crisp smell, with just a hint of dried cherry.
In your mouth, this Champagne is just bursting with flavors: black cherries, roses, blood orange, plums. But don’t let all that fruit fool you. It’s not sweet. This is an elegant, dry Champagne with bright bubbles and vibrant acidity.
We enjoyed it with potato chips and dip while watching The Oscars, but the Pinot Noir in here creates so many other options. Piper Hiedsieck suggests trying it with sirloin steak or beef skewers on the barbecue. It would be amazing with salmon, really nice with spicy foods, and bonkers with a bowl full of berries with cream— thanks to all of that fruit flavor.
I would love to serve this to start off a cocktail party, especially in the winter, when we all tend to drink more red wine. This is such a sophisticated, elegant Champagne. It just might be my new favorite sparkling rosé.
At $79.99 on wine.com, this definitely falls in the “Francey but also a bit Fancy” category. I’ve never ordered from either of these sites, but Premier Champagne has it for $57.99 and Grape Tray has it for $49.95, just check if they ship to your state.
Chin!
